YUMMY LITTLE TEA CAKES (Butter cookie recipe)

1 egg, 1 tsp vanilla, 1 stick margarine, 1 8 oz. pkg cream cheese, 1 pkg Duncan Hines Butter Recipe Golden Cake Mix, powdered sugar

Preheat oven to 350. Mix all ingredients except powdered sugar. (will be consistency of mashed potatoes). Prepare tart pan with cooking spray. Fill each about 1/2 full. Bake about 10-12 minutes, or until lightly browned. Cool a few minutes, then remove from pan. Dust with powdered sugar. Makes 36. Tip: Try the Honey Nut & Strawberry Cream Cheese for variety! Yummy!         


         Big Country Frittata

1 lb. sausage

4 red potatoes sliced thin

2 cups fresh spinach or 1 cup chopped aspargus

1 cup of halved cherry tomatoes

half a bunch of green onions chopped

8 eggs

1/2 milk

1/4 cup of Parmesan shredded cheese

1 teaspoon salt

1/2 teaspoon of pepper

1 cup of shredded cheddar cheese

Preheat oven to 350 degrees. In a large skillet cook you red potatoes until tender drain and set aside. Brown sausage over medium heat drain and then add cherry tomatoes, spinach, or aspargus. Cooked veggies until tender. In a medium bowl add eggs and milk and seasonings and whip until all is mixed together. Pour everything in a oven proof skillet or cast iron skillet and pour egg milk mixture over the ingredients. Add the two cheese and bake for at least 30 minutes. Check after 20 to see if eggs are not runny.


Pumpkin Pancakes

2 cups of Bisquit

1 cup of Eggnog

2 eggs

3 cups of pumpkin

1 tablespoon of Cinnamon

1/4 teaspoon of cloves

1/4 teaspoon of nutmeg

Combine all ingredients and mix well and pour into a pancake maker

Makes about 20 medium pancakes


                                                                                              

                     German Apple Pancakes

2 apples chopped or a can of apple pie filling chopped up

1/2 tsp. of cinnamon

dash of nutmeg

2 Tbsp. of brown sugar

2 Tbsp. of regular sugar

1/4 cup all -purpose flour

1/4 tsp. of salt

1/3 cup of milk

2 eggs

2 Tbsp. of butter or margerine

2 Tbsp. of powdered sugar sifted over the done pancake

Oven set at 375 or 350

Combine all the dry ingredients in a bowl then add the wet ingredients. Mix good with a mixer.

Lightly spray a pie dish with Pam and wipe a little bit around with a clean paper towel to make it even.

Pour the ingredients in pie dish and cook for about 20 minutes. The pancakes will go up the sides of the pie dish and you can tell if it is done. Meanwhile as that is cooking add the chopped apple’s in a pan with a little bit of water and 1/2 teaspoon of brown sugar and nutmeg and 2 tablespoon of butter or margerine. Simmer slowly.

After pancake is done put on a plate and fill the center with the apple mixture. Roll up sides like a burrito and hold together with toothpicks. Add powdered sugar over the top and serve hot.

Jam Thumbprint Cookies

Cream together 2/3 cup butter and 1/3 cup granulated sugar till fluffy. Add 2 egg yolks, 1 teaspoon vanilla, and 1/2 teaspoon salt; beat well. Gradually add 1 1/2 cups sifed all purpose flour, mixing well.

Shape in 3/4 – inch balls; dip in 2 slightly beaten egg whites. Place 1 inch apart on greased cookie sheet.

Bake at 350 degree oven for 15 to 17 minutes. Cool slightly; remove from pan and cool on rack. Add whatever flavor of preserves to centers of cookies. Makes about 2 and 1/2 dozen cookies.
